Ingredients:

For the Jackfruit Filling:

  1. 2 cans of young green jackfruit (in brine or water), drained and shredded
  2. 1 tablespoon olive oil
  3. 1 onion, finely chopped
  4. 3 cloves garlic, minced
  5. 1 red bell pepper, diced
  6. 1 teaspoon ground cumin
  7. 1 teaspoon smoked paprika
  8. 1/2 teaspoon chili powder
  9. Salt and pepper, to taste
  10. 1/2 cup vegetable broth or water
  11. Juice of 1 lime

For Serving:

  1. 10-12 small corn or flour tortillas
  2. 1-2 avocados, sliced
  3. Shredded cabbage or lettuce
  4. Vegan sour cream or cashew cream (optional)
  5. Lime wedges, for garnish

Instructions:

  1. Prepare the Jackfruit Filling:
    1. Heat olive oil in a large skillet over medium heat. Add chopped onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
    2. Add the shredded jackfruit, cumin, smoked paprika, chili powder, salt, and pepper to the skillet. Cook for 2-3 minutes, stirring often.
    3. Pour in vegetable broth or water and simmer for 10-15 minutes until the jackfruit is tender and most of the liquid has evaporated.
    4. Stir in lime juice and adjust seasoning if needed. Remove from heat.
  2. Assemble the Tacos:
    1. Warm the tortillas in a skillet or microwave until soft.
    2. Spoon the jackfruit filling onto each tortilla.
    3. Top with sliced avocado, shredded cabbage or lettuce, and a dollop of vegan sour cream or cashew cream if desired.
    4. Squeeze fresh lime juice over the tacos before serving.
